I love saying that it’s closer to the end of the year than the beginning! My favorite time of year is October through December. And today’s weather makes it even better! It’s drizzly right now and going to be all weekend. Perfect weather for chili! Which is exactly what I’ll be making tonight for dinner. 🙂
As for last night’s dinner, I had the last of the pork tenderloins with some steamed broccoli and some russet potatoes I nuked for about 10 minutes, cut into bite-sized chunks, sprinkled with some Italian seasoning and salt, and toss around a piping hot cast iron skillet coated in olive oil. They came up nice a soft on the inside and crisp and crunchy on the outside! Next time, more salt…
